About the distillery

Holyrood Distillery started distilling in September 2019 in Edinburgh's city centre. Located right in the heart of Edinburgh's historic distilling district, on St Leonard's Lane with views of Holyrood Park, their home is a 180 year old building that has been thoughtfully renovated to produce gin, liqueurs and whisky.

Holyrood Distillery is the now realised dream of Canadians Rob & Kelly Carpenter and Scot David Robertson, who collectively share a love for Edinburgh, Scotch Whisky and interesting challenges. 

The Holyrood Distillery focus is flavour and they have crafted a range of fledgling spirits using novel malted barleys, fermented with mixes of distilling, brewing and wine yeasts and experimented with spirit cut points in the pursuit of creating, capturing and then concentrating the right balance of flavours even before wood selection and maturation.

This lot offers the fantastic opportunity to own one cask of single malt scotch whisky from Holyrood Distillery; Edinburgh's first single malt distillery for almost 100 years.

Recreating single malt whiskies based on those once produced during the city's rich distilling past, this is a unique opportunity to own one of these rare Heritage Barley casks, to be filled in 2021.

This is Chevallier Hogshead #01, which will be filled with spirit created from Chevallier barley; an ancient barley variety originally used from the 1820s to the 1900s by Edinburgh distilleries such as Bonnington, Croftanrigh, and Yardheads.

Holyrood Distillery will also use old-style brewer's yeast, distil slowly and fill only sherry casks in the way that the now-closed Edinburgh distilleries would have once done. The sherry casks used in the past would have been sourced from the Port of Leith, only a few miles from Holyrood, when shipping choice sherries from the continent was the norm.

How Does The Holyrood Cask Auction Work?

Step 1 - Bid on casks

Select the cask number (#1 to #15) and barley variety (Chevallier or Plumage Archer) that you are most interested in and place your bids in our live auction.

Which barley variety is right for me? 
Tasting notes of new spirit from the barley varieties on offer are as follows...

Chevallier : Malty sweetness, green fruits and a marmalade citrus note. 

Plumage ArcherMalty and caramel sweet tones, apple and pear with hints of spice.

Step 2 - Select Wood Type

Following the auction end, winning bidders will be contacted by Holyrood Distillery to confirm their cask type; American Oak ex-Oloroso Sherry Hogshead or Spanish Oak ex-Pedro Ximenez Sherry Hogshead.

Which wood type is right for me?
Tasting notes of flavours introduced by the wood types are as follows...

American oak sherry : tropical fruits, citrus and vanilla and cinnamon spice.

Spanish oak sherrydried fruits, orange zest and warming spices of cloves and ginger notes.

Step 3 - Fill Cask & Age

Casks will be filled with the fledgling spirit in early 2021 and put to rest in the warehouse to become unique single malts - bottled when you decide the time is right.  Cask owners will be invited annually to visit and sample the cask.

Winning bidders will be invited to see their spirit being created at the distillery, the cask filled at the warehouse and be able to collect a small duty-paid sample of the spirit. They will also be invited to visit their cask annually to sample and assess the development of their whisky.

The hammer price paid will include storage for up to ten years, annual sampling and insurance.

IMPORTANT:

- Please note that bottling costs, customised labelling, duty and VAT are not included but illustrated costs can be provided by Holyrood Distillery. 

 - Annual storage fee will become payable by the buyer after the included 10 year period.

 - Legal ownership of the cask will be transferred to the buyer once payment has been received by Whisky Hammer. Funds will be held by Whisky Hammer until the buyer is in legal receipt of the cask ownership to protect the buyer's transaction.  

 - Ownership of this cask is auctioned in bond. The buyer will be responsible for any costs relating to removing the cask from bond in the future (i.e UK excise duty / VAT) as well as any other costs associated with cask movement and bottling.

 - Non-UK buyers must appoint a duty representative to act on his/her behalf for transfer of ownership of the cask (Whisky Hammer can assist in finding a UK representative if required).  The duty representative will need to be registered with HMRC and will normally charge an annual fee for the service.

 - Please note if the new owner is a UK revenue trader (business or private individual connected to the trade), they will need to be registered with HMRC and hold a WOWGR certificate.

Insurance against breakage or loss during transit is available at checkout at a cost of 3.5% of the hammer price.

 

Due to the various ages of bottles and their seals, condition of liquid is at the buyer's discretion and no claim can be lodged against leakage in transit.
